My name is Maxime, Certified baker since 2007 from the INBP in France. Born and bred in Normandy, I fell in love with bread as soon as I was able to pick up the family bread from the bakery. Since then, I worked hard to be where I am now. My secret for a good french baguette or croissant is my home made yeast Bob. It has been part of all my recipe since 2014 and it is getting stronger and stronger everyday. It gives a unique taste to my bread. So let the magic happen and France come to your month.
I have always wanted to start my own bakery after my previous experiences at La Gerbe d'Or and Eric Kayser in Paris. I moved to Sydney in 2014 for new adventures. Australia is now my home and it is time for me to share my passion and the secrets of beautiful breads. While we all eagerly and impatiently wait for the opening of a bakery shop for Paris Brest, I will be delighted to offer you baking classes and my products on special orders. I will have limited capacity to start with but will always try my best to accomodate your wishes!
I work with local suppliers to source the freshest, the most authentic ingredients and use old-fashioned techniques to ensure the highest quality. My goal is to make your tastebuds happy!
We all need to do an effort to reduce our carbon footprint. That’s why, at Paris Brest, we only use local ingredients as opposed to processed or imported products. Every product are crafted from scratch to provide the best taste whilst respecting Mother Earth.
